Father's Day Gift Idea-Easy Peach Preserves

If you're like me then you have a dad who really doesn't need a thing for Father's Day.  It's gotten to the point where anything handmade is good enough and actually more than good enough especially if it has a grand kids picture on it.  Good ole' sis has taken care of that already! 
When unpacking the groceries from this week I found that our cashier had stuck a complimentary publication called "Experience a Healthier You at Reasor's" amongst our goods.  In it is a recipe for 'Easy Peach Preserves'.  And I just so happen to have peaches in the freezer!  Father's Day gift dilemma solved!! 
*Note! The peaches came from my dad's peach tree last year!  When I was little he had eaten a peach and threw the pit to the pasture which actually ended up being along the fence line of the pasture and our yard and now he has a peach tree!
**Note! Note! One of the fondest memories I have of my Granny (my dad's mom) is her love of peaches! Even ones from a can!  I remember seeing her slurp the juice even!☺☺
Easy Peach Preserves

Makes 3 cups/These low sugar preserves will keep for up to six months, refrigerated.  This is a great way to use overripe stone fruit.

4 cups fresh peaches, apricots or plum, peeled and chopped
1/3 cup natural cane sugar
2 tablespoons lemon juice
1 tablespoon gelatin

Boil fruit, sugar, and lemon juice in a medium saucepan for 3 minutes; stir constantly.  In a separate bowl, sprinkle gelatin over 1 cup cold water and let sit 1 minute.  Add to fruit mixture and heat, stirring until gelatin is completely dissolved, about 3 minutes.  Let stand 5 minutes.  Skim off foam with a spoon, cover, cool, and refrigerate. 

They were peeled and sliced already so just had to chop, chop,chop!

Batteries ran out in my camera so I couldn't get a pic of the gelatin and water. Sorry!  The larger jars were salsa jars and the smaller one a relish jar. All those jars I've been stashing in the garage were handy today!  I painted the lids of the larger jars with chalkboard paint. (Keeping the smaller jar for us!)

Shucks! It turned out blurry so I decided to play around with Photoscape!!  I realize these kinda look 'halloweenish' but I'm choosing to think more OSUish!  Go Pokes!! ☺☺

And the only thing I had to purchase was the gelatin!!  So this was easy and affordable!!
