I used my bean pot on Saturday to make a roast turkey breast...probably the best way to make a turkey breast! I love my bean pot! I wanted to make the groceries stretch a little this week so I used the small amount of turkey leftovers and added it to things I already had to make my first potpie! And I must say...it was pretty darn easy!! My mom used to make something similar to this when we were growing up so thanks mom for the inspiration!
Ingredients:
Leftover turkey
Mixed veggies
2 packets turkey gravy mix
6 biscuits
*I put the veggies and frozen biscuits in the frig before leaving for church. The veggies were still a little icy but the biscuits were thawed which is what I wanted.*
Using two forks, shred the turkey:
Meanwhile have the gravy going. Add the veggies and mix a little:
I added a little bit of ground sage to the gravy mix, pour over meat/veggie mix:
Add biscuits, making sure they touch.
Bake at 425 for 35 minutes:
(This is after 20 minutes....needed 15 more!)
It was tasty! My Big Hunkie even suggested giving the recipe to his mom to try...what?! Whoa! That was his way of telling me it was good! ☺
